Classic Hamburger Gravy

Growing up, my grandma made all kinds of gravy. Sausage gravy, chicken gravy, roast beef gravy—you name it. But one thing she never made was hamburger gravy.
The first time I ever had it was years later when I started dating my husband. After Sunday night church one evening, we stopped by his grandparents’ house for a late supper. That’s where I had my very first experience with hamburger gravy.
To my complete surprise, she served it over pancakes.
I remember thinking to myself, “What kind of goulash is this?” It definitely wasn’t something I grew up with, and I wasn’t quite sure what to expect.
But the moment I tasted it, everything changed.
It was rich, comforting, and full of flavor. Before I knew it, that strange little dish I had questioned just minutes earlier had instantly become one of my favorites.
Now, almost 40 years later, it’s still a comfort food I come back to again and again.
Unfortunately, I never got her exact recipe. But over the years I’ve experimented with it—trying different variations and tweaking it until I landed on a version that really satisfies. This recipe is the one my family loves today, and I think it would make her proud.
If you’ve never tried hamburger gravy over pancakes, it might sound a little unusual at first—but don’t knock it until you try it. It’s simple, hearty, and the kind of meal that sticks with you long after the plate is empty.
My husband‘s favorite version is adding corn to the pancakes, you try it however you like it!
Classic Hamburger Gravy
Beef & Gravy
1½ pounds ground beef
1 tablespoon olive oil
1 medium onion finely diced
3 cloves garlic minced
3 tablespoons all-purpose flour
2½ cups beef broth
1 tablespoon Worcestershire sauce
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
Instructions
Brown the beef.
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until fully browned. Drain excess fat if needed.
Build the flavor.
Add diced onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds more.
Thicken the gravy.
Sprinkle flour over the beef mixture and stir continuously for 1 minute.
Make the gravy.
Slowly pour in beef broth while stirring. Add Worcestershire sauce, paprika, onion powder, salt, and pepper. Simmer 6–8 minutes until thick and glossy.
Serve.
Spoon over mashed potatoes, pancakes, homemade bread, noodles, or zucchini noodles!
