Whether you’re cooking for a busy weeknight dinner or preparing a quick side dish for holidays, these garlic herb potatoes deliver every time. They’re soft on the inside, slightly crispy on the outside if you finish them under the broiler, and infused with the rich, comforting flavors that make every bite irresistible.
SLOW COOKER GARLIC HERB POTATOES
Ingredients
2 lbs 900g baby potatoes, halved (or quartered if large)
3 tbsp olive oil or melted butter
4 cloves garlic minced
1 tsp salt
½ tsp black pepper
1 tsp dried rosemary or 1 tbsp fresh, chopped
1 tsp dried thyme or 1 tbsp fresh
1 tsp dried parsley plus extra for garnish
¼ tsp paprika optional, for warmth
¼ cup grated Parmesan cheese
Instructions
Prep the Potatoes
Wash and cut potatoes into evenly sized pieces so they cook uniformly.
Season
In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, rosemary, thyme, parsley, and paprika until well coated.
Slow Cook
Transfer seasoned potatoes to the slow cooker.
Spread them in an even layer.
Cover and cook:
HIGH: 3–4 hours
LOW: 5–6 hours
Stir once halfway through if possible.
Finish & Serve
Taste and adjust seasoning if needed.
Garnish with fresh parsley and Parmesan if desired.
Serve warm.
