Loaded Taco Skillet
Ingredients
1–1½ lb ground beef
1 packet taco seasoning (or homemade: chili powder, cumin, garlic powder, onion powder, salt)
½ cup water or beef broth
1 can black beans, drained & rinsed
1 cup corn (frozen or canned)
1 cup diced tomatoes or Rotel
1½–2 cups shredded cheese (cheddar, Colby-Jack, or Mexican blend)
Toppings (optional but highly recommended):
Diced avocado
Fresh cilantro
Sour cream (or crema)
Lime wedges
Jalapeños or green onions
Instructions
Brown the beefIn a large skillet over medium heat, cook ground beef until fully browned. Drain excess grease if needed.
Season it upAdd taco seasoning and water/broth. Simmer 2–3 minutes until saucy.
Bulk it upStir in black beans, corn, and tomatoes. Let everything heat through, about 5 minutes.
Cheese timeSprinkle cheese over the top. Cover the skillet and cook until melted.
Finish & serveTop with avocado, cilantro, sour cream, and squeeze fresh lime over everything.
